Maggie,

You and Doug are both on our prayer list for Grace and full recovery from Doug's heart attack. You and Doug will be with the group at Lake Wateree State Park in spirit the whole weekend. We will look forward to seeing you later this year at another Alumalina gathering.

Always remember God Loves You. You and Doug are "Salt and Light" for a lot of people in this community.

Now that I am home, maybe I can post something that reads better.
I called and reserved spot 17 for Friday and Saturday, but because of our friends showing up at our home late Saturday afternoon, we will have to leave no later than 3pm Saturday. This leaves Saturday night open at that site, if anybody on the waiting list wants it. Let us or John know.
Now, I'm off to PMland to check on Doug.

I appreciate all the pm's and other expressions of concern.

The big issue at this time is that his brain was deprived of sufficient oxygen for such a long period of time as to not be recoverable. He is not responding to any stimuli at this point and remains on life support.

I'm temporarily going back to the up coming rally and then we'll return to Doug and Maggie.

Sorry to hear about Doug. Our prayers are with Doug and Maggie.

We are going to miss Alumalina this time around. Beth's mother is celebrating her 90th and we will be with her. We provided our site (37) to brand new owners. I'm uncertain if they are active on the Forums, but they will attend Alumalina.

We will try to make it next time.

Well, it's early am at the ICU. I've gotten a little sleep and so, what do I do??....my thoughts turn to DO baking and all the plans and preparations Doug and I have made these last few months to share bread baking with others.

I am posting here the charcoal instructions we have worked up, and would love to see y'all go forth and bake bread, like we planned. Forgive me for not repeating the entire recipe, anyone who needs it will have to go back a few pages to find it.

I am also sending the final pdf. version to Gary, to post here and hopefully on the DO cooking thread.

And so, charcoal instructions......

Step 3--bake:

About 30 minutes into resting period, start 45 charcoal briquettes. When nearly ready, put lid on DO and arrange briquettes, 33 on top and 12 beneath. Let preheat/finish a few minutes, while you prepare your dough.

Remove bowl cover from dough. Snip top of dough 2-3 times with sharp scissors. Sprinkle with wheat bran, seeds of your choice, cornmeal, oats, etc., if desired.

Lift dough by parchment paper, place all quickly into oven and replace lid.

Bake 30 minutes, rotating top and bottom..... opposite directions, 45 degrees each...... at the end of 15 and then 30 minutes.

***After the 15 minutes rotations, arrange charcoals on lid around outer edge for remainder of baking time.

***After the 30 minutes rotations, take a quick peek inside to check browning, and replace lid about 1/4" ajar, to allow steam to escape and crust to dry and crisp. Wind will affect how hot your top coals become, so watch carefully. If a very windy day, remove about 9 coals around at this point, if bread is becoming too dark.

Bake about 10 minutes more, lid ajar, about 40 minutes total. Bread will be browned and feel light and hollow when done.

Remove loaf carefully to wire rack and let cool before slicing. If you cut too soon, interior will be damp and sticky. Bread should be airy and porous, crust crisp and chewy. Store when completely cool in plastic bag or other airtight container.


Our DO is not the deep model. Those of you with deep DO's may not need to move the top coals to the outer edge after the first 15 minutes, so modify as needed. The center of ours wants to get too brown, unless we move the coals.

Wish we could be there to demonstrate, but there are enough experienced cooks and DO users coming that you can surely manage without us. Maybe someone will have time to do a run-thru or two before the rally.

I am going to start a thread on the situation with Doug, to get this issue off the rally thread but still allow anyone who is interested to follow. I have really appreciated the support and comfort in pm's and emails.

Goes without saying, too, that we sure have enjoyed the Alumalina rallies, the Leake family and other fine folks we have met there.

May see ya'all again, but not for a while.
