Screen under refrigerator

63 globetrotter has screen wire under the refrigerator and an additional piece in the belly pan. Is this original and necessary? There are no vents on access door

My '67 GT had both those screens. Both were 1/4 inch galvenized mesh presumably to keep the critters out.
I had a bigger problem with wasps so make sure to check the opening on the roof under the cover. I had to put a piece of finer screen up there as well.

Yes, it's needed for air circulation to keep the fridge cool.

Larger access door

Would a larger vented access door serve the same purpose? I️ plan to raise the refrigerator up several inches to provide space for wiring and plumbing

When the refrigerator is running on LP, it’s needs a chimney affect air flow (in from the bottom out through the top) for the CO to be drawn outside. For a proper setup the intake vent should be lower than the burner.
