Most cabinetry is high gloss Wilsonart laminate. Lowes or HD will special order a sheet (usually 36" or 48" x 96") for you. A pint of contact cement and a bunch of foam brushes are all it takes to laminate one or both sides of 1/2" or 3/4" plywood. Most of the interior is 1/2", laminated on both sides. Trim the parts with an edge router.
You can actually order sheets of pre-laminated ply from Airstream, but I would hate to guess at the shipping and handling cost. Part numbers in the parts manuals at Airstream.com.
The only place I could find matching edge binding was from the Airstream factory, ordered through my dealer. You can get the binding part numbers from the parts manuals. The binding was very reasonable, but the shipping and handling was sky high. I used contact cement to attach my edge binding.
