OK, it is confirmed. We are pizzaholics! Although we had pizza yesterday, after running errands all day, we stopped at one of our favorite "hole in the wall" spots and had pizza again, at The Mellow Mushroom, in Chattanooga.

OK; last night we had: from the garden; fresh swiss chard, and boiled new potato's and grilled marinated t-bone steaks. For desert; left over rhubarb sauce w/ vanilla ice cream.

These look like a lot of fuss, but they're not. It's salad in a crouton cup. I'm going to make the shells ahead of time and take Airstreaming because they make great snacks (or a light meal). They're also great appetizers because you can serve salad in bite-sized pieces.

Take a cookie cutter (star shaped or round) and cut-out shapes from slices of bread. Frozen bread makes a cleaner cut. Butter both sides and press into muffin tin. Toast in oven until golden.

Fill with your favourite salad. The one shown is one of my favourites - baby greens, feta, red onion, carmelized walnuts in a raspberry viniagrette.

BTW, found these great metallic-looking plates at a dollar store. Goes well with the Airstream.

Roughing It In Yosemite

We had ribeyes, tomatoes in a balsamic and italian parsley vinaigrette, sauteed wild mushrooms and steamed rice on July 2nd.

We were camping in Yosemite National Park with friends in our Airstream and toasted, "Here's to roughing it".

Hope everyone had a happy and safe Fourth!

Tonight we had slow roasted Hawaiian Kahlua style pork, with spicy pineapple chutney and steamed sugar snap peas. And rice - can't forget the rice.

Oxymoron For Dinner

Jumbo shrimp sauteed with extra virgin olive oil, garlic and a squeeze of Meyer lemon that we liberated from our neighbor's yard. Petite peas and rice rounded out the rest of the meal.
