1961 22' Safari

We are in the process of gutting and remodeling a 1961 22' Safari. My biggest challenge right now is determine the holding tanks.
-size, where to install, etc. There is not much space below the floor for 3 tanks, but I think I could stack a black and gray water in the back and put the fresh water under the couch. Any thoughts or suggestions on what you have done? I'm new to this, so if this is not the correct place to put this thread I'm sorry.

Fresh water tank can go under the couch. Black water tank can sit above the floor under the toilet. For grey water the cleanest method is to buy the 3.5 inch think tanks from VTS that fit below the subfloor and above the belly pan.
