I don't want to bust your bubble but ceramic tile is just not going to work with all the flexing that an Airstream goes through. Granite is also very heavy and prone to cracking. The shower enclosures you are looking at also will most likely not work either as they are also not designed to go down the road. From looking at the floor plan you posted in another thread just about everything you are going to need is going to require a great deal of custom work. It's all doable but you need good fabrication skills or a big wallet.
I would suggest that before you do a total commitment on the interior layout, you mock it up using foam or cardboard. Find out where your plumbing and tanks have to be including drains, vents, etc, in relationship to frame cross members, windows, interior structure, and existing shell cut outs and access doors. What I'm saying here is to keep the cart behind the horse.
I'm also re-configuring the layout on my 71 GT, it takes a great deal of pre-planning to get every thing to work. Lots of tape on the floor, measuring, and mockups. See my thread below for my long, long, long, term project.
