If your converter has a float mode (I think I sent you one if I remember) I would not worry at all about leaving it connected. It's not too big a deal if you would feel better not connected but depending on how long you stay disconnected will depend on the amount of self discharge. Figure about 10-15% per month.
Having said that, it's virtually impossible to build significant sulfation on a fully charged battery. That is what you want, full charge as much as possible.
Your not going to gas off on AGM unless its overcharging and then it could vent (actually overpressurize and release). Otherwise it recombines and will last probably 10 years or longer if you talk nice to it.
