Help, Burner Timing Out

Hi All
Trying to refurbish the Bowen I replaced the gas control valve (Unitrol) and the pilot assembly and burner tube, yeah!. 1/3 price of new water heater. Now the burner lights but shuts off (times out) after a few minutes? I have bled all the air out of the lines as this is all I could find searching the forums. I have no idea where to go from hear why would it cut off? I am sure its a safety issue but all is seems fine.
Any help is appreciated and urgent as we want hot water this next week at Garner SP

I'll stick my neck out and say it's not timing out. What happens is that you light the pilot, it heats up the themocouple, you move the gas control to "on", the main burner lights, the airflow (watch closely) of the big fire pulls the pilot flame a little bit away from the thermocouple, the thermocouple cools slowly, bing the gas valve senses insufficient heat, clack the gas turns off.

Fix it by moving the position of the pilot flame. Make sure it's still impinging on the thermocouple (1) when it's just the pilot and (2) when the main burner is on.

We'll be doing a "stump the chump" episode later on this one. (if you don't listen to click and clack, then you wouldn't know that the chump would be me, not you.)

You know your burners. Heated to temperature and cut off then on again.
