Not really
Pretty much just whenever you have the next fall rally.I am up for whatever date.We plan to go up north anyways and make a big trip out of it and visit Misty,s Dad again for a couple weeks.

I am sorry I was talking about seeing you all at the fall rally in north georgia again since we are not able to make this one.I had a blast the last time meeting everyone.You all were great and then meeting some of you all again in florida was fun also with more new faces to meet and greet as well.

Yeah, I know what you mean. My wife and kids went back to school the Wednesday and Thursday after New Year's respectfully so we drove down to the Can Opener Rally after I got off work Friday night. We got there about 2:00 am. Even with my diesel we didn't seem to wake anybody when we arrived. Wheel Interested was awake, but that was about it. We would have arrived an hour earlier except we had to hunt down an LP dealer and fill the tanks so we would have hot water the next morning. It really isn't a bad drive. Maybe next year we can caravan...I promise to drive slower than I usually do. I seem to have a reputation.

Sugarfoot, I don't think Becki and I met you and your mother. We look forward to doing so at the Springstream rally and getting to tour your way cool Airstream. We saw the outside but didn't get to peek inside. Anyway, looking forward to meeting you both in April!

No Minnie's Mate, we didn't get to really meet, but Kathy Posey sort of introduced you to me as you were driving through to your site, kinda like "Hey, that's Minnie's Mate!" Unfortunately, there were quite a few folks I didn't get to meet at the Can Opener, so much to do and so little time. But we'll meet for real at Hiawasee. Looking forward to it.
Everyone is welcome most anytime at Sugarfoot's Tradewind. My little vintage Mom is a homebody, prefers to stick around the trailer, quilt, watch TV, or nap. It took Devoman's insistence to get her out to the pot luck in Florida. But she loves the rallies and enjoys each visitor to the trailer. I probably need to make a sign of some sort, double-sided with "Mom's Napping" on one and "Mom's Awake" on the other. Then everyone will know when its cool to drop in.

I am asking everyone that would like to, to meet at the Pavillion Saturday morning at 10:00am or so, to get a handle on the days activities, and to informally meet and greet.
Of course many will be out and about earlier, but for those who sleep in this will be (hopefully) no strain.
-We will give out some cards to put on your AS if you will allow others inside in the afternoon ( 2 pm or so) for a "tour".
-Also the raffle tickets for the evening's give aways.
_ This should make it easier to put a face and a name together...
if this time is still too early let me know...we will shoot for 11.

10:00 sounds great. Found out today that my oldest boy is in a baseball tournament the same weekend so we may be in and out, if we have any high school baseball fans or anyone interested in touring Rabun Gap Nacoochee School Saturday afternoon I can arrange it. If you have ever driven through Rabun County on 441 then you have seen Rabun Gap west of the road sitting on a hill just before you enter Dillard GA.

As much as I love my son and baseball, this rally is as close to heaven as you can get still on earth. Great people, lots of aluminum, and of course Food/Music.

e. Whole Hog - if anyone is interested we will do this last (the hog should be cooking while we speak)
3. Seasoning methods
a. Injections & Marinades
b. Dry Rubs
c. Brining
4. Sauces
a. Varieties & applications for different meats
b. Off the shelf vs. custom or homemade
c. Do’s and Don’ts (sometimes known as my way or the highway)
5. Methods of Cooking
a. BBQing vs. Grilling vs. Smoking
b. Fuels (charcoal, wood, gas, etc.)
c. Temperatures for cooking. Being "done" vs. "good eats".
6. Discussion
a. Questions and answers
b. For the Die-hards: The Whole Hog (everything you wanted to know)
7. Competition BBQ events (optional discussion if we have time or folks won’t leave)
a. Organizations and how to participate
b. How to become a BBQ Judge
Items to Note:
1. Start time? Early morning (9:00) or mid-afternoon (2:00). Post suggested times based on other activities. I’m flexible.
2. We will be discussing the ribs and chicken first in case there are individuals who are not interested in cooking brisket or shoulders. (those intimidated by large cuts of meat will be excused early)
3. Someone needs to start a post to list participants or send me a PM. The number attending will be important for several reasons. (handouts, samples, will this class make?, etc.)
4. The syllabus is not sacred. It is open to suggestions, deletions, additions, etc. I will try to cover anything relevant. Anyone who would like to present their favorite BBQ technique or secret is welcome to join in.
5. Class objective: Have fun. Get some sauce on your shirt. Pass the post-test.
