On my '64 there are two different kinds of knobs. One is a larger, aluminum knob that you turn right? to open the door. Those you can remove by screwing the knob to the left. It will unscrew, and then you can remove the rest of the latch from the backside of the cabinet by removing two screws.
The other knob appears to be chrome plated steel knobs. They are smaller, and you latch and unlatch by turning it 90 degrees. They are a little more difficult to remove. Not hard, just more difficult than the large ones. They are held in place by the same part that enables them to latch. These have a little roll pin that you have to drive out. Be careful when you do this, as the knob also has a spring in it. Once you get the roll pin out, you don't want the spring to pop out and lose it.
I wasn't able to reuse the roll pins so I had to purchase new ones the right diameter. They were too long, so I also had to cut them off. Make sure you get them the exact same length, or it will cause problems opening and closing the cabinets.
