chocolate artists

well the day is approaching...

and while there are annual threads here related to v'day

they contain very little about chocolate.

this year the 14th is all the more special,

with birthdays and anniversaries (airforums will be 6!) and the holiday...

all on thursday!

but chocolate happens everyday and it's good for the heart, mind & soul and filled with mysterious treasures...

so in this thread lets celebrate chocolate!

i'll start by sharing a local place where...

-EVERYTHING is hand crafted
-they use ONLY the finest ingredients
-the products are a celebration for ALL the senses
-folks come from all around to see and taste their efforts
-their traditions are swiss, but the appeal is universal

they recently marked the 50th anniversary with this delicious video...

it's about 12-15 minutes of chocolate, confections, creative fingers and so much more.

-hand grown roses
-marzipan reptiles
-a cauldron of caramel
-wedges drenched in cocoa
-well dressed frost-ez
-snow covered pines
-halloween cookies
-colors, refections
-rivers of chocolate
-a quick nibble by a worker...
and of course,
-tasty boxes of valentine samplers...

the video is chockobloc with symmetry, splashes of color, close ups, artistry and LOVE...

that you can TASTE (well at least i can ) and will today!

enjoy the view and share your chocolate artists, chocolate favorites and....

all things CHOCOLATE, right here...

Chocolate, someone say chocolate?!!! MMMMMMMMMMM

I think I have just gained 5 pounds just dreaming of chocolate!

We have two favorite chocolate shops. One is Anderson's Candy Shop (since 1919) located in Richmond Illinois. In fact we stopped there yesterday and picked up an entire bag of light and dark chocolate covered crispy bars, raisin bars and peanut butter bars. At Easter they make chocolate crispy nests with jelly bean eggs.

Our other favorite shop is Beersten's Confectionary in Manitowoc Wisconsin. (since 1932) They also have homemade chocolates, candies and a soda fountain. They make chocolate novelties from curiosities to the humorous. We always pick up some chocolate covered sponge candy. White Gull Inn of Door County has their chocolate logo medallions made by Beersten's and we always pick some up.

You can't beat chocolate covered strawberries though, or Fanny Mae dark chocolate butter creams, or Godiva chocolate covered biscotti, but I would be more than willing to test your favorites just to make certain.

My favorite Chocolate shop is my son's and daughter-in-laws in Cannon Beach Oregon, Bruce's Candy Kitchen. Some of you have had their Chocolate Apples at the b.b.bash. Yum Yum Yum Apples and Chocolate, both good for you, not counting the carmel, toffee,and almonds. I would be bringing some tasty treats down to the newport seafood rally but they are closed for remodeling

I love those segmented chocolate apples, and little dutch shoes. Gosh I am flshing back to a flood of chocolate treats. There is a bakery, darn, we just forgot to go to Riverside in McHenry Illinois with the best chocolate donuts with the cooked fudge frosting, oohh.

Teresa, Does Bruce's have a web site and take internet orders?

2Air I watched that video today and it was like a gourmet cooking lesson only really fast. Amazing how they make things like the flowers and twirl the roll-ups.

We went to a chocolate festival in Kohler Wisconsin at the American Club, 5 star appointments, home of the wall of china (stacked toilets) and the Kohler factory and design center. Great posh place to stay with those luxurious suites and bathrooms if you have the chance. Their festival featured an evening of chocolate with a room full of exotic chocolate creations with chefs on duty for flaming dishes.

Wow nice info here. We used to have a place in metro Detroit called Sanders
SandersCandy.com, A family tradition since 1875

they had great chocolate sundaes, chocolate tea cakes, etc. They went out of business and then were bought up by someone else using their name and recipes, still good just not the same stores/etc. The fudge for the sundaes cures what ails you if you can ever score some, in Michigan its sold without prescription in large retail stores...


Any kind of dark chocolate with hazelnuts is really handy for kayaking and Airstreaming, ask me how I know...

Bruce's Candy in Cannon Beach, Or. Yes they do have a web site and I just looked at it and it also is being remodeled. It's Bruce's Candy Kitchen . I checked progress at the store yesterday and they are getting sheetrock. Just like a airstream redo, only going to take a weekend of cleaning to get it ready to go, 3 years later. They have a goal of spring break to be open. Can't wait for that dark chocolate almond bark, better quit thinking about it.

hi blue pearl, c, sista and other choc-addicts...

i recall having a slice (or 2) of that apple covered in nuts and cocoa beans...

it was tasty!

some of you like drinking chocolate?

and i don't mean grocery store swill, i mean "drinking chocolate"

well i'm working my way through last years 'top 10 drinking chocolates" this year...

somebody has gotta do it!

the scho' euro/extreme dark is basically chocolate shaving that u melt with a hot liquid (milk or water) and drink...

it is VERY THICK and very tasty....

the l.c. i'm trying is the spicy hot aztec and while it looks like a typical powder, it's mostly pure heaven and a little heat.

i'm slowly working my way down that list and then will drink this one...

Amy's Candy Kitchen.
They are local to a friend who lives in Wisconsin and he brought two down for a treat for us when he visited last year. Absolutely AMAZING.

Right now I am having a Dove Milk Chocolate Pecan Pie Caramel that I got seven bags of for free after coupons at Walgreens after Christmas. Not too shabby!

My 7-year old son (aka "little chef") made for his mama a pretty good chocolate mousse for dessert tonight using Nestle's semi sweet morsels.

good luck finding a bottle, it was sold out within hours at most vendors.

guuugl' the label words and read the press stories about it...

still there are other options in other regions like this...

It is indeed the season, and I got an early start on it tonight with the following:

Chocolate Ice Cream with Fudge Chunks, Toasted Marshmallow & Graham Cracker Swirls.

Deelish. Lots of choc - plus it's got that smores thing going on that's so fitting to this forum. Personally, I like this much better than the campfire thingies. .

We're really fortunate to live in the Bay Area. Rechiutti Chocolates, Christopher Elbow, TCHO: Buy Dark Chocolate and Gifts , SCHARFFEN BERGER -- Home and Chocolates & Chocolate Gifts | See's Candies are all local companies. Nothin' says romance like a huge heart shaped box of See's nuts and chews.

Gemma's partial to the little green boxes that come from Teuscher Chocolates, and their champagne truffes. They were served at our wedding reception at Campton Place - San Francisco - Luxury Hotel, Restaurant and Bar, where they also serve the most amazing hot chocolate - rich, thick, slightly bitter and served with whipped cream on the side. We have a pot of it on our anniversary when we have breakfast at the restaurant.

We haven't had dinner yet, and are, now, seriously contemplating having dessert first.

1 1/2 cups 60% bittersweet (or semisweet) chocolate, chopped
1 cup heavy (whipping) cream

Place chocolate in a heat resistant bowl. Bring cream to a low simmer but do not scald and immediately pour over the chocolate and leave for about 5 seconds. Start to gently stir cream into the chocolate with a wooden spoon until it is all melted and smooth. It will look horrible for a minute but keep stirring. You will be rewarded with smooth, warm chocolate heaven.

Let the ganache sit for a few minutes to cool to room temp and then dunk berries and anything else that strikes your fancy into the chocolate. Chill in fridge or leave on counter until firm (this can take several hours on the counter and the fridge is much faster).

Talking Chocolate Ball Thingies, Versions 1.0 - 5.0

Filling:
1/4 cup heavy cream
1/2 stick unsalted butter
6 oz milk chocolate pieces
6 oz semisweet chocolate pieces
1/4 cup Jim Beam (or champagne, or ???)
Dutch cocoa powder for dusting (v. 1.0)

Coating for version 2.0
12 oz semisweet
1/3 cup chopped pecans (optional v. 2.5)

For the filling, combine the cream and butter, cook on low heat until shimmering. Remove from heat. Now add the milk choc and semi, stir until melted and smooth. Mix in Mr. Beam, pour it all into a bowl, cover and freeze for about 40 minutes or so.

Line a baking sheet with foil or parch paper. Scoop out the filling by tablespoonfuls and drop onto the sheet. Cover and freeze for another 30 minutes.

Put cocoa in a bowl. Roll each choc mound between your palms into a smooth ball, then roll it in the cocoa. That's what you see in the picture above, version 1.0.

But maybe you want to go a little further! Version 2.0: Put the thingies back on the sheet and put them back in the freezer while you make the coating.

For the coating, line a 2nd sheet w/ foil. Place the semisweet choc in a dbl boiler over simmering water. Heat until smooth. Remove from heat.

Drop each thingie into the chocolate and coat completely. Slip a fork under your thingies and lift them out and on to your new sheet. Sprinkle with pecans if you want (2.5).

Put your chocolate ball thingies in the fridgie, uncovered, for about an hour. Store in an airtight container thingie.

In versions 3.0, 4.0 and 5.0, you don't have to do the chocolate coating thingie.

Version 3.0: Toast 1/3 cup finely shredded unsweetened coconut over medium heat, stirring constantly, until just lightly browned. Transfer to a bowl and let cool. Stir in 1/4 tsp ground cardamom, pinch of ground cloves, 2 Tbls sugar, and 1/4 tsp ground cinnamon. Roll each of your mounds in this bowl.

Version 4.0: Whisk 1/3 cup sugar with 1 Tbl cinnamon, 1 tsp allspice, 1 tsp chipotle powder, 1 tsp ancho powder. Roll your mounds through this.

Version 5.0: Whisk together 1/4 cup cocoa, 1/2 tsp 5-spice powder and 1/3 cup sugar.

would be choc' truffles done traditionally...

rolled in choc' powder 2 LOOK like a real truffle (fungi)

many variations but here's a traditional version in guy speak...

and with pix.
