interior skin

I am completely gutting my 1967 overlander international and remodeling it in a modern way. I know some of you may be appalled that I wouldn't keep it as original as possible, but the previous owner had already painted over all the cabinetry... kind of bummed because it was actually quite beautiful. Anyway I would like to put the aluminum look in the front area. I'm taking out the couch bed and putting in a booth dinnette set. My question is: what material should I use? Aluminum is kind of expensive could I use stainless steel for the same look? Also should I leave the interior vinyl skin off? Or put the aluminum/stainless steel sheets over the vinyl interior skin?

Stainless steel will work but it will be heavier and cost just as much or more than aluminum.

theres rv surplus in indianna,they will sell you a 102" by 15' piece of .032 alum. comes in a carboard tube. about 400.00 with freight. i keep a roll of it in stock for belly pan, and flat panel replacement. is same thickness as stock and will polish very nice. they have a web site.
