Just about our favourite spot is north of I-70, north of that looong stretch of Interstate been Green River and Salina, where the signs say No Services For 105 Miles.
I think the exit # is 129. If not, it's close. It is labled Temple Mountain. The road is graded and graveled. This is in the heart of the San Rafael Swell. We prefer the North San Rafael Swell, as it's mostly known just to locals. We like to camp in the San Rafael Bridge Campground in a place called Buckhorn Draw. There is camping on both sides of the river, with the north side being for longer rigs. There is also designated dispersed camping north for a few miles.
There is also dispersed camping at the Wedge Overlook. This part of the San Rafael is called the Little Grand Canyon.
You will need to bring all of your own water, and dump your sewage elsewhere. We usually travel with jerry cans of water and a funnel.
Very hot in summer, but pleasant during the shoulder seasons.

The BLM office in Moab and Moab Visitor Center can also guide you to dispersed camping. We also recommend the Horse Thief Campground. Any more, it's getting busy and sometimes full, but dispersed camping is allowed anywhere not marked to the contrary. But do ask about road conditions, as dirt roads are mostly jeep trails in that area.
The BLM offices all have web pages, and if you decide to phone for info, ask if they have a recreation specialist that you could talk to.
