plumbing replacement

We got our 77 Sovereign checked and there are leaks in the waterlines about every foot, I have decided to run pex thru-out. I have the owners manual as well as the repair manual for our model so what I want to know is: how many have done it? and level of difficulty? we plan on a point of use water heater that plugs into 110.

Pex install is easy.

Replumbed a 75 in about a day, including disassembly for access and reassembly.

75 Overlander ... everything original supply plumbing turned swiss cheese from lousy winterizing except the water heater and tanks replaced.
The only "difficult" parts were demo (remove the bed goucho and part of shower), new shower faucet, and reassembly.
