What is is dripping hose?

I suspect it is like condensation from the AC unit, but can someone confirm? Thank you! (newbie yes)Click image for larger version

Welcome to the forum and to Airstream camping! The evaporator drip pan also has a roof overflow in case the hose gets stopped up and condensation will run onto the roof if the trailer is not reasonably level. Also in Heat mode the outer coils condensation will just run onto the roof along the rain rail and down the side of the trailer.

There is also a drip tube from the Fridge ... it carries condensate from fridge area so it doesn’t pool in the fridge. There is a trough under the fridge internal coil... if those coils dripping.. that’s your water.

If not then AC.

Yes, it's most likely condensation from the A/C.

The fridge drain tube usually terminates in the compartment behind the fridge, where there are scuppers that let water (including from rain or sprinklers) drain out of the compartment. The hose the OP has pictured is definitely from the roof ac.
