Storage in the "cabinets" under the dinette?
The dinette benches are boxes, and some have lift-out lids (covered by the dinette cushions). Are these valid places for storing less-frequently used supplies?

I am interested in the Nest 16U, probably 2020 since there are no more 2019s in stock near me. It would seem logical that storage would exist under the dinette cushions since there is storage under the FB, but none of the video reviews ever mention it.
Is there a Nest 16U owner out there that could clarify? Pretty please?

Yes, sort of
There are removable panels under the cushions, a couple of them are screwed down with equipment underneath. The removable ones (3 I believe) do have some open space underneath but probably nor as much as you’d imagine. Also the panels are are smaller than the space beneath, so max size is further restricted. We haven’t been out in our Nest yet (a long sad story, basically Ford lost our new tow vehicle and we had to reorder), but we are planning on storing some stuff down there.

Here's what they look like. You have to remove both the side and the back cushion to access either side compartment. The sides are about 18"deep, the middle only 12". Hope this helps.

Got it! Went off to look for videos. Looks cozy.
I noticed the post isn’t telescoping and the base of the benches doesn’t appear to have a lip to hold the table top. Does the post pop out and the table top extends across all 3 benches? Is there something (other than weight above) that holds the table top in place?

The table leg comes out in order to change the dinette into a bed.
I'm not close to my Nest right now, but if I recall correctly the rails for the table width extensions provide a stop so that the table top doesn't slip off the benches. Yes, there is a height difference of the width of the tabletop, but it doesn't impact the comfort of the bed.

Yes, the table top sits on top of the benches, but the cushions that cover it are thinner, so overall the bed is flat.

Absolutely. That is what they are for. Great place to store pillows, comforter, toilet paper, paper towels,etc. ;however. Be mindful of the hitch weight and only store light weight things there.
