I have the same model TB. Using my Sherline and feeble memory from a couple years ago, I was around 900+ lbs. on the tongue with full LP tanks, factory batteries and some fairly light stuff in the front storage but, no water in the tanks (gray, black, or drinkable).
Personally I would not add any additional weight to the rear of the rig, such as a generator, etc., or your handling would go crazy. Your proposed bike setup over the LP tanks sounds like a good plan. One of our forum members detailed (with pics) a gen rack addition over or behind the batbox.
