Purchase advice: Globetrotter 30

So, I already posted in the Flying Cloud section regarding our decision between a FC30RB and GT30RB, but I think we have decided to go with the GT30. So, figured I'd bring the discussion over here. Hope that's ok. Here's the original thread and poll:

We looked at the GT30 a few days ago and while we hadn't really considered the twin bed option, we ended up coming around to the idea. Of course, two days after we looked at the trailer, it was sold off the lot. We understand that we're between model years, everyone wants an RV right now and COVID has delayed production. Inventory is slim.

We really like the Copenhagen Cream colorway. It's what drew us to the Globetrotter in the first place. So, while I have seen a couple London Gray and Slate Gray GT30 trailers still for sale around the country, we think we really want the Copenhagen Cream.

Our dealer found out that they will be getting a new 2021 GT30 Queen in Copenhagen Cream in a few weeks and we can have first dibs if we want it. The soonest we could get a twin model in our color choice would be September, which would negate a trip this summer with our 13-year-old daughter before school starts up in the fall. I'm 5'9" and my wife is 5'6", so we're okay with the shorter queen. On the twin, we just liked the aisle for dressing and the way it made the trailer feel bigger and more spacious. On the queen, we do get the underbed storage and larger rear trunk for chairs, so the queen isn't without its own advantages.

What we don't like about the GT30 is the dinette table. This is why we weren't able to make a decision immediately. The standard dinette on the FC30 or the front dinette of the GT27 are both far more appealing for family meal and game time. The GT30 table is skinny and wobbly (at least in the two GT30 models we toured). We don't love the side-by-side seating, or staring at the galley counter. But, we LOVE everything else about the GT30. The open lounge layout with the three large windows, all with upper Vistaview windows is so bright and airy. The dark walnut cabinetry with white Corian counters, curved white upper cabinets and cream upholstery is crisp and elegant. The styling reminds me of a majestic sailing yacht.

I personally prefer the more plush cushions and higher seat backs of the FC. My wife prefers the more minimal and firmer GT cushions. But in the end, I can use throw pillows if it means getting the GT styling.

But that table .... I'm thinking that if we can get the exact same tabletop from AS, we can attach it with sturdy hinges and add some kind of support to double the depth of the table. It would fold down at 90 degrees when not in use to allow for aisle access. The other option is a larger table that pivots and slides. Longer term, we could have Ultimate Airstreams modify the floor plan to create a traditional dinette using GT styling and materials. But this is very costly.

The 2021 model coming in has one big benefit: AS has replaced the 6+3 gal water heater with a tankless gas heater, so we should be able to take virtually unlimited showers on city water. Nice for a family of three. And it drops 500lbs of weight. But, this particular trailer has the convection microwave upgrade, which means that we'll lose the gas oven. We'll gain some pantry space, but I liked the gas oven for boondocking. For those that have the convection option, what are your thoughts? I plan on installing a 600aH lithium power system with 3000W inverter so I should be able to run the oven off battery when needed, although probably not while running the A/C.

Ok. So decision time. Do we take the 2021 GT Queen that's arriving this month?
