Eyechip, your logic seems clear and well thought out. A 23’ tows great, just make sure your TV is up to the specs. The bath the 23’ is one of the highlights for the reasons you mentioned. You do give up prime widow space as you’re aware of. The dinette in a 23’ is the weakest part but if you’re by yourself, you don’t have to sit with your back to the window.
Our first Airstream was a FC23FB which we bought due to TV constraints. We took a chance that we’d overlook the U-shaped seating. That lasted two trips and by the end of the season we went back to the dealer and found the GT’s. My wife would have been happy with a 25’ GT but the price difference to a 27’ was only 4K at the time. We went with the 27’ and are very happy we did.
That said, given your situation, make sure you spend some time in a 23’ and 25’ to visualize how it would work for you. For me, there was little difference in towing the 27’ vs. the 23’. A 25’ would be even easier. However, if you go up to a 25’ be sure to get a TV with enough payload capacity since the tongue weight on a 25’ is even more than a 27’. The 23’ is much lighter so that’s a plus. We towed our FC with a VW Touareg TDI and got 16 MPG on the highway.
