All personal preference but our family really likes the gas oven. At night when you get in for dinner it heats the AS to about 80 degrees, a welcomed event when the temp outside is around 35, and again in the mornig for breakfast same thing. We found that anything you can do with a microwave you can do with an oven and stovetop. Just one less thing to go wrong.

That was our thought as well. Not mention, we all have propane pretty much all the time. We don't all always have AC power and even if we do, it usually requires some switch flipping at the least. The gas oven is always ready.

It is a personal preference. We ordered a 22 Classic and opted for the convection microwave. Our previous Classic had the oven and we can bake on the gas grill everything we used the oven for. We currently have a convection MW in our FC and really like it. Whatever you chose you will be pleased.

2018 26RB: Just replaced our gas oven with microwave convection.
I just finished replacing our gas range with a microwave conversion oven. We had a Thor Synergy with one and loved it. Gas ranges in our experience have never delivered decent performance for things like roasting and baking. For roasting I use my grill (BBQ in Canada). The conversion was fairly straight forward. We had a small microwave in a drawer to the left of the range. I bought a 23” Atwood cooktop and it fit into the cooktop space exactly and the gas line connected to the cooktop easily. Our range used the same gas connection location. The microwave took a bit more work but not a significant amount. I bought the Convaire microwave used in the Airstreams along with a trim kit. The outlet for the microwave needed to be relocated for the new location - easy to access once the range was removed. I needed to trim the edge of the range opening about 1/2 on both sides to fit the trim kit. I used 2x4 pieces on flat on the bottom of the cabinet opening as shims to raise the microwave to the proper height to fit into the trim. Once that was done, the microwave slid into the opening easily. I also added a wooded support underneath of the cooktop front to support the top of the trim. With the range the entire front of the cabinet was open.

Convection vs gas oven
My 1997 Airstream came with the optional Convection/microwave which is also a hood exhaust for the 3 burner gas stove. Under the stove are 4 deep drawers for all things kitchen related.
This was my first experience with a convection oven but once I understood the operation, I would not choose a gas oven. It does get hot but thats why you have a roof vent and a hood vent (just be sure its flapper is open).
As a full timer for 3 years I still had a nice outdoor kitchen set up almost year round. 75% of my cooking was outside where my gas grill had a side burner. The microwave was used daily for breakfast and the convection oven for baking. It does make the same amount of noise as a microwave so that might be an issue in a small rig. My vote is for the convection oven....oh and it did a wonderful job baking a Rum Cake at Christmas!!

In three different trailers, we've had a gas oven alone, gas and convection microwave together, and now just a convection microwave in our Globetrotter. IMO, having a microwave is far more convenient, especially since a lot of our main meal preparation is done outside on a Weber. Not to mention that with both of the ovens in previous trailers we had issues with hard starting, slow heating and hot spots. Maybe just bad luck, but still...
I suppose it's nice to have the oven heat the trailer on cold days, although the forced air heater in our Airstream already does that very efficiently. On hot days, though, the last thing we want to do is fire up an oven in the trailer.
A gas oven was very useful when dry camping but now that we have a good sized Lion battery string, solar, and a 3000W inverter we can run pretty much any electrical device we want, including the microwave, without a problem. For us, microwave for the win.

Gas oven all the way. No need for a hook up or a generator. Both wonderful for this boondocker.

We use our oven pretty much every trip, hardly ever use micro. But we boondock most of the time, so electricity isn’t part of the picture.

Thanks again everyone for all the replies and advice. Since I last posted I got more information from my dealer. The conversion is relatively easy. Other than the cost of the new appliances, there needs to be a filler board put in to accommodate the different width of the microwave versus the oven. If I do the conversion I’m likely going to do the labor myself. It seems pretty simple.
It seems that folks in this thread are about 50-50 on the microwave versus the oven, very interesting. I think I’m going to use the trailer for a month or so with the oven as it is, then I’ll make a final decision.

2019 21’ Bambi FB, I keep thinking that a gas oven would be better. Buit I most always cook outside on the fire or grill when boondocking as well as at 30mamp service. Microwave is nice for a treat.

I love to cook and bake and needed the extra drawer space in our 30’ so I opted for the convection microwave. We had one in our 22’ Sport and I loved it as I bake a lot of bread. However, the 22’ Sport had a Cuisinart convection microwave and the 2019 30’ had a Contoure. IT’S A PIECE OF CRAP! We used it for a total of 5 times and the thermal fuse blew so we had to buy a new convection heating unit per Contoure. Okay, that’s fine, stuff happens. Two weeks after the element was replaced, the numbers on the digital panel went out. Great, that’s needed to know how much time and what temp you’re cooking at. This unit is awful, perhaps we got a lemon.
We never once had an issue with the Cuisinart and I used it constantly. I do keep the sink doors open when baking because it does heat up the cabin and now knowing that the thermal fuse blew I don’t want the oven to overheat again. Very frustrating. I still like to have a convection microwave but not this particular brand. Not sure if AS is using another company besides Contoure. Hope they are.

Interesting thread. We have 2020 FC 30. It came with the microwave/convection oven and we really like it. Versatile and practical. My wife got it hot enough to bake bread in it, for example. We also like the three-burner cooktop. I like to cook outside when weather permits, with a propane camp stove, but when I cook indoors the cooktop does great because it's capable of putting out a lot of heat. But we've never had an Airstream with the oven, so no basis for comparison.

We had ovens in all of our trailers till I bought my 2004 Classic. It came with a convection/microwave. Problem on most of the ovens we had was they seem to have a wide swing in temperatures and the relative position of the shelving to the burner made it difficult to do any bread/cake/muffins. They tended to be too dark on the bottom and not done enough on top. Always was an adventure.
Fast forward to the microwave/convection and we found the convection side was a joy to work with. Also loved the extra storage space we got with a stove top burner too. I typically always have electric so lack of power doesn't cause any hardships for us.

We have and use only the gas oven. We bought the current FC20 in part because it had a gas oven. Would not own a trailer without one.

In over 30 years of RVing in multiple trailers/MHs, we've used a gas oven exactly once. Just a matter of lifestyle. We're looking at a GT that only has an oven and no microwave. We'll probably just end up getting a small cheapo microwave for those times we want to do bag food, pop corn, heat up drinks whatever.
As far as an oven for adding that toasty feeling on cold days, that rarely comes up here in Florida.

It depends on where and how you camp and cook. Propane oven works when boondocking. Convec/micro requires shore power. In my 2018 Serenity 28 the only way to have a microwave is without a propane stove - one or the other.
So it depends. For us the choice was the convec/micro option.

I don't understand this talk of getting an oven but no microwave. My 2017 FC 23FB came with both an oven and a microwave. Now, it isn't a CONVECTION microwave, but it came with a microwave.

Convection/MW vs gas oven...
Had both; used to like the oven, which we rarely used...it can get hot in the AS when using the gas oven. We do not find the convection to give off heat, as was mentioned earlier...it's certainly not like the gas oven we had!
We find we use the microwave a lot, and also use the convection oven....more than we used to use the gas oven. The thing is, it is an electric oven with a fan, just like most folks have with their electric ovens at home. Trouble is, it is not straight forward to use, like a microwave..set the time and temp, then hit start. The convection oven instructions for us were not straight forward, and wife hated it first few times we used it for convection cooking...but now, we know how to set it and we don't think twice when we want to bake or cook using convection. As others said, various models in the past had both...we had both in our first 25' Safari..I would not go back to the regular oven having my choice, unless a small microwave was included. remember also, a convection oven cooks much faster than a gas oven. Learn how to use it and you may like it better than gas....we do.
