I found a Camco flip up counter at Amazon, finished in oak, but that wouldn't match our interior. I found a white Formica flip counter picture on Pinterest, but no information on where to buy it. Looks too big for our 23d, but this is the idea.

RFP-Great idea! Now I can keep the cover on all the time, and the larger hole makes it easier to grab and remove. I'm going to show this to my husband. The honey-do list is never ending! Thanks for sharing. Now if I could just remember where I stored the darn thing...

Rich your picture is very similar to what our old 25' had, and there are some threads here with flip-up counters like that.

Not sure if anyone checked out the model-specific threads linked in Post #4, but you will find many helpful ideas for the 23D, based on RFP's design and fabrication skills!

Oh, for what its worth... I installed a 'robe hook' (made by Grohe, same as the faucet) to hang the sink cover on when I need full access to the sink, like for dish washing... When traveling, the sink cover stays on the sink... it has yet to bounce off (!)

Thank you kind sir! You must be akin to my husband. I'm blessed that my husband is quite the mechanically inclined fool that lovingly indulges my whims! He too loves to fabricate. A fellow Airstreamer, Frank&Mike, have a thread "we made some changes" admire my husband's handy work and regard him as their "Airstream Mentor"! Check out the thread. Ironic they are from Texas and wished they close to us, and at the same time we'd love to jettison California for Texas...

Thanks, there were a couple of pictures of kind of what I'm looking for. One post said it can be ordered from AS, but for $180, way too much. I've seen others from Camco for $32, albeit oak instead of white Formica.
Ideally, I would like a white, triangular, Formica flip up counter. Barring that, a rectangular one. My wife says she has seen them in some AS in the classifieds section, so they exist. I see the brackets on Amazon so it may be a future project for me.
My wife says no deal in cutting a hole (any size) in the cutting board.  Personally, I think the sink cutting board is another useless feature, never did like it. You want to keep it looking nice for when you sell your AS, so it has no use. On bumpy roads it bounces out of the sink and onto the floor, so I store it under the mattress. If you use it for counter space you can't turn the water on.

We've done the same as RFP in cutting a hole in our sink cover and then a 1/4 round router bit to soften the edge. Looks like the factory did it. I think our hole is 4" or 4-1/2". We also have a bamboo flip out shelf mounted along the side which works great and we can still get in and out without much trouble. 4riveteers, I'm loving the SMEV oven/range!
Oh, and for what it's worth we asked the dealer for info on the matching formica flip-out shelf found on the 25' trailer and.... never heard back from them. Unfortunately they are batting .0000 for returning phone calls from either phone or in person inquiries even though they take my phone info. Frustrating.

Here's a 2007 Safari 23' with the configuration we would need, but it's still the oak finish. It does have the 2 brackets for each side of the glass doors.
It's currently listed in the Airstream Classifieds area.

The lack of counter space was one of the things that drove me nuts about our 19'.
I did end up buying one of these folding tables to use while cooking. Now that I'm in a 27', I don't have much need for it, but it stores easily in the closet so can be handy potentially.
