Has anyone ever pushed the button to attempt to convert their AT&T Prepaid plan to a Post Paid plan? I assume it is more like a normal cell phone where you have minutes per month and get hammered if you go over.

We used to have AT&T. At some point I got frustrated with the pricing and we switch to Consumer Cellular. It runs on the same network, but it generally seems to be a better deal. There’s enough choice that you might find something to meet your needs.
At&T postpaid? For mobile handsets all of their current post paid plans starting at $35/mo are unlimited talk and text, including Mexico and Canada roaming. Have you reviewed plans on their website?
