I just looked at the schematic you posted, I may be wrong but I see only the toilet going into black tank, the other three drains into the gray. Can’t blow it up on this phone but again I clearly see all water going to gray except toilet

The only documented "extra" is the lav sink going into the black tank on some models. One would guess that it's easier / cheaper to do it that way on those floor plans.

My 2017 has all sanitary water draining to gray tank. Only toilet goes to black. Verified by two different sanitary water issues as recently as last night and had to run lots of sanitary water to check for leaks, gray tank filled, black levels never changed. Verified by dumping

I can confirm that it did. While running the lav, shower, and galley faucets I almost overfilled the black tank. Further experimentation proved that the lav sink drained into the black tank.

Apparently, you'll need to look at a blown up version of the schematic. The "lavy" drain clearly empties into the black tank, right next to the intake for and the word "Toilet". Note that the rectangle that depicts the tank is actually divided into two parts; black and gray.

When you look at the drawing, assuming it's more or less laid out like the floor plan of that Airstream model, the lavatory sink would have a VERY long run to get to the gray tank. The run would be under the floor, threaded through the frame, not dump into the top of the tank, and be a 'mother bear' to fix if something went wrong, like a clog. It's far better from a layout and drainage distance point of view to drain the lavatory sink into the top of a tank, and the black tank is a good spot on some models.
As has been mentioned before, this does get extra water into the black tank. That's not a BAD thing...its easier to dump the black tank contents if there is a lot of water in it. Boondocking? Then I'd just suggest minimizing the amount of water down the lavatory sink if it's going to be an issue. You can certainly wash hands and brush teeth in the kitchen sink, for example. Since we now own a 30' Classic, the issue with the lavy sink drain in our prior 25' Flying Cloud is moot. While I prefer that everything but the toilet dumps into the gray tank for reasons I posted earlier, there is room for other opinions on the subject and, as you point out, there are also workarounds to mitigate potential issues.
What was troubling for us on the FC was that the owners manual stated specifically that the lavy sink drained into the gray tank. Also, the drain schematic in the manual wasn't definitive like the one I found later in the 2017 FC parts book and which I posted above. It was definitely a surprise, and almost a major incident, to discover that the lav sink drained into the black tank.

The Airstream “manuals” are not always totally accurate. (Understatement of the year...)
I would hope the parts book drawings might be better, but I’m not holding my breath. Used to write manuals for a living. These are not well written, to be very polite and too diplomatic...

The plumbing diagram for my 2016 FC RB twin shows the lavy sink draining to grey, which it most assuredly does not. It drains to black. Fine with me, as we find ourselves dumping kitchen sink water into the toilet. Grey is always the problem for us.

Last week we took Elsa out for an 8 day outing in northern Wisconsin. VERY NICE! I tested the lav sink and found it drains to the gray tank. Just to be sure I tested it twice.

If you ever washed dishes, or drained pasta in your kitchen sink the grey tank has food waste in it. It stinks. Most parks, municipalities, building codes, and river keepers take a dim view of dumping grey water on the ground or dribbling down the highway.

As one would note in my previous posts, I was of the "all campgrounds take a dim view" opinion. We pull up to out latest COE campground and there on the wall is proof that, nope, not everybody. The rules here allow you to dump gray water (but not black water) into the ditch. It then runs a few hundred yards into the Arkansas River.
So this morning's first expedition is off to get an adapter and a very unique color hose (white would be a bad choice ) .... hmmm ... where to store all this stuff .... yikes ....
