I think there is an additional consideration to this question. Yeah I'm the non electric if at all possible guy.

Are you a full timer, a half year on the road type or like us we get as many long weekends or week or two at a time as we can manage?

Full timer, space is a big concern.

We just finished a week at a state park and only on the last morning did we use the trailer for any cooking and that was just to perc a pot and nuke a breakfast biscuit for me. It was time to go home.

The other issue that some may have mastered and others will learn is electrical power management. A 30A rig has limits and easy to task it's limits. AC, electric water heater, (that's about 26A right there) convertor running and then try some appliance and you might be at the edge of available power thru the 30A cable.

It was a bit warm and steamy last week and with the AC on and the electric water heater the EMS was showing not much left over for other stuff. It was a simple choice to reduce the electric load and switch to gas for the water heater. We ran it only when we needed it.

Akron jr kamado grill, very versatile, can smoke, grill, bake or be a pizza oven. Cast iron pan that fits it (no handle). Coleman 3 burner camp stove (426d), cast iron griddle, dutch oven. Swing away fire pit grill. Burger basket, aluminum foil and grill utensils. Those cover pretty much any outdoor cooking situation.

For coffee, a percolator. We also have an espresso maker, tea pot and French press but found we mostly use the percolator for coffee. Occasionally use the other 3 to make a cappuccino (French press is great for frothing milk). We do have a nesting set of pots and pans for inside, but only use the indoor kitchen for morning coffee or washing dishes unless the weather is really bad.

Double-walled stainless french press for coffee with a small metal kettle. If we are feeling fancy, I have a small hand-crank burr grinder that you can remove the crank and attach to an electric drill - super convenient for fresh ground beans.

We alternate between the Traeger Ranger, RTic King Disc, seafood steam pot, Ooni pizza oven (the pellet version), and a small charcoal grill with a homemade smoker pot for outdoor cooking. Usually only pack one at a time depending on the trip - the Traeger probably sees the most use.

We carry a small-ish countertop icemaker stowed in the closet when not in use.

I have a small gas/butane burner that we sometimes use for outside cooking as well - it doesn't see much use but its nice to have.
