vintage canned soup recipes

Both my husband and I have recipes of our mothers and aunts that relied heavily on none other than MMMMM Good... Campbell's soups for ingredients and quick starts. My aunt had a Lipton soup mix recipe or two. How about you, have you any favorites that you still make today using shortcuts of old?

This was prompted direct from this evening's dinner of pork chops and peas, using a can of tomato soup and frozen peas. Pork chops and potatoes uses mushroom soup, sliced potatoes milk and a pressure cooker. Italian Delight is tomato soup, creamed corn, hamburger, macaroni, green pepers and onions. I believe my aunts recipe was can mushroom soup, a pkg of dry lipton onion soup, rice and chicken. Nothing gourmet about these and full of sodium and fat, just like mother used to make.

chicken breasts or thighs in with a couple of cans of cream of mushroom topped with fresh broccoli and baked in the oven. good stuff and super easy.

I would not make my potato soup without cream of mushroom. And good heavy cream is a must. Also a little old fashion tomato soup in the meatloaf mix is a must. Gee I cant stop, Golden mushroom with baked porkchops and mashed potatoes Robert

We make a quick and easy recipe that we call "Davis Stew" - named after the family who gave us the recipe:

2 cans Minestrone Soup
1 can Rotel tomatoes
1 can Ranch Style Beans added to:
one pound of browned ground beef.

One can Cream of Potato soup
One can of chicken (tuna-style)
Macaroni
Dash of milk
Pepper to taste

Cook macaroni and drain, return to pot. On medium heat, add soup, chicken (flake chicken chunks before adding) and dash of milk. Cook until hot. Great for making on the road--just pre-cook macaroni and freeze or keep in fridge.

I made this up while in college. Tasty!

Meatballs and Cream of Mushroom Soup

A version my Mom used to make and my kids loved when they were little. It was a good way for a military family to stretch a pound of ground beef.

One Can Cream of Mushroom Soup
1 cup Minute Rice (uncooked)
1 lb ground beef

Add your favorite hamburger seasonings to the ground beef, form into small meatballs and brown in skillet. After browning, add one can cream of mushroom soup and about 1 cup Minute Rice. Let simmer till meatballs are done and rice is tender. If too thick as cooks, thin with a little milk. Another version is to omit the Minute Rice and serve over mashed potatoes with green peas and corn niblets as sides.

Quick and Simple Chile

Thia is a chile recipe that I grew up with. It's quick, simple and uses Campbell's Tomato soup. Great for camping.

Quick and Simple Chile

1 1/2 pounds lean ground beef
1 or 2 cloves garlic minced
1 onion, large, chopped
1 green bell pepper (optional), diced
2 tablespoons chile powder (or to taste)
1 (12 oz) can kidney beans
1 can tomato soup, undiluted
Salt and pepper to taste

Saute the meat, onions and garlic in a non-stick skillet and cook until the meat is no longer pink and the onions are translucent, about 10 minutes. Stir in chile powder. Add all other ingredients and let simmer for 30 minutes. Serve topped with diced sweet onions and grated cheddar cheese. Good with fresh tortillas or even Ritz crackers. Serves 6

If i'm in the kitchen opening a can of tuma, all three of them are at my feet even before I finish opening the can!

If I'm opening a can of anything else they are nowhere to be found. How do they know the difference???

Another cat's favorite pretty low tech
I remember the one with tuna, cream of mushroom soup, milk instead of water in the can, and egg noodles. Oh I think there were peas in it too, canned peas.

I can guarantee this one is double vintage, because I remember my mom serving it about once a week. Fifty years ago.

"As for recipes using the campstove, soups are good. There is a Girl Scout recipe called brownie stew that calls for a pound of ground beef plus a couple cans of Campbell's alphabet soup (there are hundreds of variation on this basic recipe, so you can adjust it for preferences). Soups give you a lot of ability to play around--plus, you can pack all the things to make your soup in the soup pot."

My mom used to make the chicken/rice/mushroom soup/lipton's onion soup on top casserole, and I pull it out for special occasions.

Also, when she would ask what we wanted for dinner, and the answer was "Idunno," she'd make canned tuna mixed with cream of mushroom and a can of peas. Served hot, over toast, it's Idunno. Watch out, julie Child.

A quick version of creamed turkey on toast or rice called for onion sauteed in onion, cream of mushroom soup and cream of chicken soup with a half can of milk, cubed turkey meat and a few dashes or worcestershire sauce.

Pork chops, (one each or more if you are hungary)
Season with salt & pepper to taste
Top with a THICK slice of white or yellow onion ( about 1/2" thick slice on each chop)
Cover with Cream Of Mushroom soup, undiluted
Bake at 350* until juices in chops run clear.

Ahhhh - you just described an old favorite - tuna noodle casserole. We did ours a little more upscale though - we used frozen peas.

You know - maybe I'll do it for dinner Friday!

I do not have a recipe other than my wife makes a great "kicked up" Cambell's Chicken Noodle by adding some expertly grilled chicked breast. I do have a question though... Where are y'all finding this Vintage Canned Soup?

I'd say if you did get ahold of any vintage soup, don't open the can!!! Campbell's has history pre 1890. Campbell Soup Company - History I used to have the Campbell Kids mugs, now my children have them for theirs. I call the recipes vintage because they were handed down from our moms and grandmoms. Once the soup was advertised on TV I think it really became a staple in every kitchen.

I am not a tuna eater, but those who do would probably enjoy it!

And funny side story about cats and cans--my two have eaten Science Diet dry food every single day of their 11 years. I have NEVER fed them people food or treats. I have been doing a bunch of research on good cat food and found that wet food is strongly recommended, especially as the cats get older (gives them water). I got them some wonderful smelly wet stuff and set it out for them yesterday. They both turned up their noses and walked away! One of them went back and licked at it a little, then walked away again and didn't go back. Wow. I have some weird critters.
