Stella's Kitchen

Stella's Kitchen use to be one of the most active threads however I have not seen anything posted in a while. does that mean no one is cooking when camping? I would love to see what folks are making

Lots of eggs in my French omelet pan. Trying to get the hang of cooking outside on the barbeque. Tried hobo packets, but that's a work in progress. What about you? Looking for ideas because I'm getting tired of frozen lasagna and takeout.

More of an efficiency tip than a recipe

I like to bring a big bag of an undressed slaw comprised of sliced purple and green cabbage, matchstick carrots, sliced green onion and cilantro, and then use it in a few different dishes over several days.

It travels well, unlike salad greens, and I can use it one day in tacos, the next I'll stir fry it into Thai peanut noodles, the next in my vegetarian Cuban "pulled pork" sandwiches (posted on another thread here), or with some dressing as a side slaw.

What I cook often depends on how long we are gone and who came with us. If the kids come hotdogs if it is my wife and myself well that is a whole different story especially if we are gone for week or longer and are staying at the same campground. Now many will say Take everything but the kitchen sink with me. (It is actually not necessary as the AS has one). I do take my infrared grill, my SV machine, a portable one burner induction stovetop and various pans.
As for food I will buy local fish if available but will also bring a 2 inch porterhouse or ribeye along with chicken and heritage pork chops. I also bring rubs and spices but for the most part stick with a mixture of salt, pepper and paprika. If in the mood I might make chicken parmesan or pasta carbonara. For breakfast usually the basics, oatmeal, eggs, bacon or pancakes with maple syrup and of course coffee. I grind my own beans and use a french press to make it.

As you can see like others I do not see any reason why one should not eat well on the road.

Cooking in camp is one of my true look forward to it moments. We almost never eat out unless on a day trip.

We use a variety of cooking techniques. Camp fire and cast iron is right up there. DO’s are multi tasking machines. Baking, stewing even frying. Coleman stove old school type coffee and various duties. Box oven has to be seen and tasted to understand.

Coffee is a separate topic. I have too many coffee makers all non electric to list.

Camp cooking is a major player for us. A bit old style nothing modern just tasty and enough to share.
