S'mores and alternative campfire desserts

I don't mind a good s'more now and again, especially with a fancy chocolate bar. But what other desserts can you cook over the campfire?

Bought a couple of pie irons and tried to concoct something that way, but didn't have the greatest luck without a recipe. I'm wondering if croissant dough, strawberry jelly and cream cheese would work in a pie iron.

When my friend Lizard found out I had purchased a trailer, she bought me the Twinkie Cookbook. Hilarious, Twinkie Sushi and all, but not so much trailer cuisine. It did inspire me to put a Twinkie on a hot dog stick and roast it. Taste-ee!

Going camping on Friday-Saturday to bookend a long road bike ride in Logan, Utah, so carb-loading and recovery is a must. Bring on the sugar/flour/butter combos!

1. Spray your pie iron with non stick cooking spray.
2. Place a slice of white bread on one half of the iron.
3. Put a couple of spoonfuls of your favorite canned pie filling (blueberry, apple, etc) in the middle of the bread.
4. Put the second slice of bread on top and close up the iron.
5. Use a knife to trim around the edges of the iron to remove the crust and excess bread.
6. Hold iron over hot coals and turn frequently to prevent burning.
7. Check occaisionally until the pie is toasty golden brown.
8. Enjoy

Try some variations:
Add marshmellow and chocolate for a s'more pie.
Crack an egg in the center and add bacon or sausage and cheese.
Fill with pancake or waffle batter.
Add some sauce, pepperoni and cheese.
Use your imagination

As a twist on smores, I take a page from George Durant, and make smokes nachos. Place a cast iron skillet on the campfires edge. Break some grahm crackers into large bite sized pieces. Sprinkle some high quality chocolate and mini marshmellows over the grahm crackers. After a short while on the fire edge, the chocolate and marshmellows will melt into an dreamy goodness.

We love our mountain pie makers! My husband puts mozzarella, tomato sauce, and pepperoni in his (he has also been know to put spam in there). I prefer the desert ones. I will butter 2 pieces of bread- place one in the pie maker (already warm works great) fill with pie filling then the other piece of bread. Sometimes- bananas, chocolate, peanut butter, ect... I like the breakfast idea- we will try that this summer for sure!

Butter your white bread well! And those no sugar preserves make great pies in the pie iron too. We got one of those panini makers that go into the campfire but haven't had an opportunity to try it yet.

Try a dutch oven.... lots of yummy things.... a personal favorite, hot apple crisp!

Butter your dutch oven then put a layer of canned bisquits and then one of canned peaches and then another of canned bisquits and just a little sugar and you got you some right good eatin right there. Yessirreeeee!!

EASY COBBLER
1. get a dutch oven and season it like any other cast iron (great for all kinds of campfire cooking)
2. sprinkle 1/3 of a box of yellow or white cake mix in the bottom of the greased dutch oven.
3. dump 1 to 2 cans of your favorite pie or fruit filling on top
4. dump remaining 2/3 of box of cake mix on top.
5. cut 1 to 1 1/2 sticks of butter in small pads and place on top.
6. Cover and place in coals and check after 12 minutes every 3 minutes until it's golden brown and oozing- MMM-MMM!
7. ice cream on top is optional!

Yes, definitely, cobbler in a dutch oven is my absolute favorite camping dessert of all time. kstampa's recipe above is tried and true, used by the Boy Scouts of America for probably about a century. One other step is to place some of the hot coals on top of the dutch oven lid after you put the dutch oven in the fire in order to get heating from all sides.

Blueberry cobbler is my favorite, but apple, cherry, peach, all make delicious cobbler.

Alton Brown just did an epsiode not too long ago about dutch oven cooking you should go to foodnetwork.com and use a few of those recipes.

Mine cost me about $20.00 at a local hunting/fishing/sports store.

This is great fun for kids:

Cut the top third off of an unpeeled orange and hollow out the peel.
Stuff a canned cinnamon roll into the larger part of the orange peel.
Top with remainder of the peeling and wrap in foil and bake over coals 'til done. You will need to check due to temp and thickness of the peel but the top of the orange will rise a bit when they are done. Then frost with the icing from the bottom of the can. - I mean the Pilsbury type that you get in the refer section where you peel the can and then whack it on the counter to open. These are so good and orangy too.

Oh, These are good too:

Cut a donut like you would a bagel and put a slice of pineapple and a bit of brown sugar in the middle. Wrap and heat in the coals 'til the pineapple is mushy. Tastes just like pineapple upside down cake!

HERE'S ANOTHER
SIMPLE DOUGHNUTS IN A DUTCH OVEN
This requires some care
1. Bring about 1" of cooking oil to frying temp in your dutch oven
2. Put a hole through a canned biscuit and drop it in the oil and cook each side (about 4 minutes each side).
3. remove the doughnut and place on paper towels to remove excesss oil
4. While it's still hot, dunk it in a glaze made of mixed powdered sugar and milk and then roll it in brown sugar.

Butter the outside of two pieces of cinnamon-raisin bread and put them buttered side toward the pan in your pie-iron. Add several tablespoons of apple pie filling (peach works well too), close and cook on the campfire until the raisin bread gets crusty. The pie filling is HOT so be careful.

In a dutch oven - line it with aluminum foil for easier clean-up.
In the bottom, put two cans of cherry pie fillng and one drained can of crushed pineapple mixed together. Then take a yellow cake mix and in a separate bowl mix it with 12 to 16 ounces of lemon-lime soda - nothing else. Pour the mix on top of the pie filling/pineapple in the dutch oven. Close the lid and place on a bed of coals with coals on the lid as well. Check occasionally - it's done when the cake rises and turns a nice golden brown on top. You can sprinkle the top with powdered sugar before serving if there isn't enough sugar in there already for you! My Scouts LOVE this one and I'm betting you'll have visitors to your campsite with spoons in hand!
