Pappy's BBQ Beans

Pappy's BBQ Beans
5-6 slices of smoky bacon chopped up
3-4 smashed garlic cloves
1 medium onion cut up
½ cup jalapenos and/or a small can of green New Mexico chili’s(depends on how hot you like it)
2 cans pinto beans
1 can light kidney beans
1 can dark kidney beans
1 can black beans (drain this can and rinse or your beans will all be black)
½ tsp black pepper
¼ tsp cayenne pepper(or less)
½ tsp ground cumin
1 Tblsp yellow mustard
1 cup ketchup
½ cup dark brown sugar
Cook the bacon until almost crisp,with the onions and garlic until soft. Add all of the rest of the ingredients, stir and then cook in the oven at 250-300 for 3 hours. If there is too much liquid, you can drain one can of the beans, the rest use all of the liquid in the cans, or after cooking add a couple of tablespoons of corn masa to thicken and give a little “corny” flavor. I also add a pound or two of finely chopped Dutch Oven cooked pork shoulder or a pound of hamburger in some batches. If I use the hamburger, I cook it with the bacon, onions and garlic at the start. I use a #9 Griswold Dutch Oven or equivalent. Once you try this recipe, your family and friends will only want this recipe, BBQ or no BBQ.

Here's another one for those that like grits and those that don't think they like grits. I also make this with angel hair spaghetti.

Baked Cheese Grits Casserole





Start off with a pot of grits cooked the normal way, then added a cup of grated cheese, some diced peppers, chopped garlic, and diced onion. Then break and beat four eggs, dump them in, plus ¼ stick of butter melted, stirred it all up and pour it into a glass baking dish. Next, sprinkle a generous layer of grated cheddar cheese over the top, plus some crumbled cooked bacon and poke it in the oven to bake for 30 minutes at 350.
