Actually, it is a tough problem, unless you are willing to visit the produce department daily or eat out of cans and boxes.
We tried a hammock above our cooktop (which has never had the burners lit). The heat and humidity from the ice maker and hot water kettle are enough to send bananas to the rest home in one day. My wife gets the best results by setting fruit (keep bananas separate) in an open Tupperware type container lined with paper towels and setting it away from sunlight or heat, as much as possible in a trailer (for us, that’s the unused portion of the dinette). An insulated store bag with an ice block helps on travel days (leave the zipper open to let the contents breathe).
We also use dried fruit, including apples we dehydrate ourselves each fall and then refrigerate.
