A couple of fine steaks passed lightly over a hot fire, crisp fried potatoes and onions, a fresh green salad laced with garlic, 'shrooms, tomatoes, cucumbers, whatever is fresh and veggie in an olive oil dressing, a crusty hunk of sour dough dipped in olive oil or spread with butter, and a glass of your favorite red wine or beer or sun tea. . .ahhhhhhhhhhh And your favorite campsite alongside your favorite Airstream/Argosy. . .take me away! ~G

popcorn, can't live without it! i would also go along with bamcamper as spaghetti is a favorite. an a special pizza. it it cooked over an open fire. no tomato sauce, just good mushrooms (slightly browned), onions, lots of kalamata olives and italian cheese mix. ummmummmummmmgood

Grilled wild salmon, asparagus w/ feta and pine nuts, parmesan/parsley new-potatoes, crusty garlic bread, and a salad w/seasonal goodies. (Right now it's orange and avocado slices drizzled w/almond oil.) And, of course, our favorite wine of the day...And the next day? Hamburgers,beans, and beer!

yum. I was thinking popcorn too. It's a perfect little food. It delights me. however if someone else is cooking, then I will take one of each of all from the persons below me in this thread. Now I'm hungry!!!!

We're high activity campers
We don't have much time for cooking. And my camping club outlawed hamburgers and hot dogs. One thing I do is make spagetti sauce at home and freeze it. It keeps the beer cold and give the campers fridge a head start. When the sauce thaws I just have to boil spagetti. I do the same with cajun rice dishes.

Food for thought and eating!
While I am capable of making them myself, part of the fun of traveling for me is to sample the local specialties. Some of my favorites include:
- Southern Wisconsin -- Cornish Pasty -- a shortbread crust filled with potato slices, ground beef, and onions -- baked until golden brown and served with a generous helping of home-made beef stock gravey.
- Quad Cities Iowa/Illinois -- Maid Rite Sandwiches -- probably the inspiration for the "Loose Meat" sandwiches on the Roseanne Barr Show --well done, crumbled hamburger with a special sauce served moist on a large bun.
- Central Illinois -- Horseshoe Sandwiches -- the meat featured can be hamburger, ham, turkey, or chicken -- the meat is served open-faced on Texas Toast or a hamburger bun -- topped with golden brown french fries -- smothered in rich sharp cheddar cheese sauce.
- Western Kansas -- Bierochs -- a Volga German pocket sandwich treat -- home-made whole-wheat bread pockets filled with well-browned ground beef seasoned with onions and rinsed-and-wrung-out saur kraut -- a taste treat even for those who do not care for saur kraut.
- Southern Illinois -- Dixie or Shemwell's Pork Bar-B-Que -- home-hickor-smoked pork shoulder with a home-made sauce that must have some horse-raddish for heat.
- Sikeston, MO -- Lamberts' Cafe -- Home of Throwed Rolls -- one of my favorites since my first encounter with some of Ol' Norm's throwed rolls in 1970.
- San Francisco Bay Area -- Pepper Mill -- their bread bowl chili can't be beat.
- Colorado Springs -- steak dinner at the Village Inn tavern. I didn't have the opportunity to eat there during my last trip, but it is among my must stops when time permits.
- Carbondale, IL -- steak dinner at the Giant City State Park Lodge (actually in Makanda, IL).
- Aurora, KY -- Ken Lake State Park Lodge -- their Sunday Brunch is absolutely fabulous.
- Lakewood, CO -- Casa Bonita -- excellent Mexican specialties with memorable entertainment.
- St. Louis or Chicago metro areas -- White Castle -- the mini hamburgers are unforgettable.

We always seem to eat pretty well while out in the coach. Lots of BBQing. But I think my favorite is that one morning, each trip, when we break out a bottle of good champagne. It's usually acompanied with smoked salmon, eggs, and either english muffins or bagels. MMMM. Too good! Ron

outlawed hot dogs and hamburgers? I wonder if they thought it was done too much. But in actuality we hardly ever have hotdogs and hamburgers on the grill and I love them too, sure is easy.
We do however bring out a hot dog or two and hold them over the fire, or left over steak or pork or whatever meat we have and then dip in sauces. A couple of campfire foods for us is 1. taking bicuit mix or prepared biscuit dough and wraping spirally around a stick and baking over the open fire, then dip in garlic and butter or red sauce or cinnemon and sugar and 2. mozzarella cheese sticks and warming them very carefully over the fire or they will fall in, mmmm.

mr and or ms or mr and ms together,
great advice... especially if boondocking... the whole multitasking thing speaks to me... homemade sauce keeping the beers cold...
if budget is not a problem, i really like the "Spotted Owl" dish i've developed over the years... quick, easy, and the kids just love it. if budget is a problem, hunt by night and cook by day... multitasking... so bauxite...
