Easy Old Time Banana Muffins

1 cup sugar
1/2 oil
2 eggs
1 Tbsp. soda in 1/4 cup sour milk
(to make sour milk add 2 Tbsp. vinegar to milk)
1 cup mashed bananas
1/4 tsp. salt
1 tsp. vanilla
1 3/4 flour
(you may add 1/2 nuts if you want)

Mix in order given with large spoon. Bake 15 min. at 350 or until a toothpicck comes out clean inserted in center of muffin. Makes 1 dozen.

I guess I have lived out of the states more than in the states. If you notice this receipt doesn’t call for baking powder. It is hard to find in some countries. The soda and vinegar act as the rising agent. You can always find soda at pharmacies. And here is another tip. If you are out of the states and lost and can’t speak the language go to a pharmacy medicine is taught in English. So the druggist will be able to translate for you.

A lot of the old time recipes call for baking soda instead of baking powder when you are using vinegar or sour milk.
1 teaspoon baking powder equals 1/4 teaspoon baking soda plus 1/2 teaspoon cream of tartar, if you are ever out of baking powder this is the substitute. I learned that in Home-ec in the 8th grade. Those were the days of cooking from scratch......
