Conversions to Food Vending

Too often whenever I start talking about my airstream the conversation turns to how difficult it would be to gut one for food vending.

Does anyone have first or second hand experience with how these modification were performed and any real issues that were encountered? It truly seems like the price of most gutted AS would be perfect for someone to have a nice clean slate to work with.

One of the best small business models I've usually thought of was a PoBoy vender who would always park outside of NAS Pensacola. They started at lunch and were usually sold out and closed by the time I was leaving base in the afternoon.
