Convection oven recipes?

I've searched the Airforums and the Internet at large - there are not many "regular" meat and potato recipes for modern convection ovens.

I have the MAS microwave/convection oven, and I'd like to start using the convection oven feature. I know how to do the controls, but not so much on recipes.

Anyone cook a

Meat loaf
Steak
Chicken breast
Quiche
Lasagna
Corned beef

or other rather plain-jane food in their convection oven, willing to share specific recipe?

Unfortunately I cannot give you specific advice as I cook most of my meats on the grills, saute and/or SV. However because convection ovens cook quicker you either reduce the time by 15 to 20 percent and the same for the temperature. All that being said the same techniques that you use for a regular stove will work in your convection oven. If you are cooking cakes or muffins use a toothpick or something else long and thin if it comes out clean it baked. For meats I usually cook to to temperature such as chicken to 160 to 165. I also set the time less then what it is recommended to cook at as it is easier to cook longer then to over cook.

Cinnamon Roll French Toast

We have a convection oven in the house, and I've noticed that things get done much more evenly with it.

A quick breakfast recipe for you - What to do with stale cinnamon rolls - make Cinnamon Roll French toast!

This assumes that you have roughly five left over:

Chop them up and dump them into a well-sprayed casserole dish. (Found out the hard way.)

Whisk 8 (large or x-large) eggs, and add 3/4 to 1 cup milk.

Dump this mixture over the cinnamon rolls, wrap with cling film, weight down the top so all gets a chance for a good soaking. Refrigerate overnight.

Cover with foil and bake (fan on) at 350° and temp-check at 40-45 minutes. Look for a temp of 165°.

You may not even want to put syrup on them...

We have baked rolls in the AS convection microwave (which is different than a convection oven.) It seemed to take a lot longer than the gas oven.
