Ah yes, that sweet, smokey taste. Smoooth as silk. Just a sip, please. I'll have mine neat. No ice, don't want to bruise it.

Weller is nice but unfortunately has been "discovered" and the prices are inching up. Give Evan Williams single barrel a go if you like Weller, its a really nice bourbon.

Love the smell, love the essence, can totally cook with it, love the subtle notes all for sure. Just cant take the alcohol burn going down. Help me to get over that then I am totally there.
I will be watching with wonder this thread as I totally understand and get it...just not the burn.
Teach me something I have missed in my xxx years of working in the food industry? I truly understand what I am not getting and would like to get it.....

Mmm, Bourbon! Our last long trip (before Covid) included visits to several distilleries around Bardstown. Had lots of warm “Kentucky hugs”. Hard to pick a favorite....

I tend to drink more tequila or mezcal than bourbon, but I like bourbon. I used to drink Blanton’s bourbon occasionally, but now it’s almost impossible to find or it’s marked up significantly when I do manage to find it. I’ve got some Weller bourbon in my bar and I recently opened a bottle of Eagle Rare that was pretty good.

Very much in Bourbon training here, if it's nothing special it ends up in a Paper Plane. Current fave is Angels Envy.

Buffalo Trace
Woodford Double Oaked
Garrison Brothers ( Texas bourbon)
Weller
Eagle Rare
All pair nicely with a campfire

My go to is Buffalo Trace. Good old Jim Beam when too many bill are do. Hudson’s Baby Bourbon when I feel like treating myself without totally breaking the budget.

So much bourbon, so little time
Many single barrel and small batch bourbons have become very popular in the last 10 years. Some are getting hard to find. Some regular bourbons, like Eagle Rare and Blanton's, have also been added to the endangered species list. I haven't seen Blanton's for years and Eagle Rare, well, it's rare, but of the inexpensive bourbons, one of the best.
I enjoy Four Roses single barrel from time to time. It's got a good flavor and is moderately priced, about $40 for a 750 ml.
If you are getting the burn (called bite) then try putting a single cube of ice in the glass with the bourbon for the first glass. Try the second one neat, no ice. See if that works for you.
The bite in bourbon is because of the alcohol content. The higher the proof, the stronger the bite. Stick with 80 proof (40% alcohol) bourbons and see if that doesn't work for you.

Bob, you have good and expensive taste! I have enjoyed all 3 of those, especially the Angel's Envy. I have found that the Jefferson line is too smooth for my taste, especially at the price.

Slowly titer the neat bourbon with "branch water" (distilled or filtered water, not tap water) until the heat from the alcohol diminishes, and the aromatic notes open. DO NOT pour over ice, and that lowers volatility and the nose disappears. You will find that most folks like 30 to 50 percent water to eliminate the burn and open the Bourbon. Try it....
