Attn: Cooks! have to cook at family campout!

HELP I am attending annual weeklong family abalone campout this weekend and my cousin has informed that I get to make a dinner and a breakfast for 8 adults and 6 kids total, and there are no food allergies.

I have NO idea what to make... lasagna, tacos, and tri-tip are already being made other nights. Any good ideas out there? We will have 3 trailer/rv stoves/ovens to use.

What are some favourite recipes????

For breakfast I like to make a sausage or ham strata. It is a make ahead, so that makes it easy. Just pop in oven usually for about a hour. Also it can be made lower calorie with low fat sausage & cheese, and don't forget egg beaters. Fruit tray and your done. Susan

We make Breakfast casserole(s)...Eggs, hash browns, onion, sausage, etc... We make ours ahead of time and freeze it. Putting it in the frig to thaw helps things cool down and then an hour before hand simply pop it in the oven. Throw in some fresh fruits, coffee and juice and call it a meal...

Dinner...Down South "Dinner" typically means "Lunch".

Some suggestions for dinner or supper::

1. Burgers on the grill. Pre-make them stuffed with bleu or gorgonzola cheese. Corn on the cob. Leave them in the husks and throw them on the grill too. If you want to add some flavor peel the husks back (don't remove them though), remove the silks and wrap the ears with your favorite flavored bacon. Cover with husks and tie closed with some cotton string. Add in a pot of baked beans, or crock pot mac & and cheese. Finish off with S'mores and they'll label you a Culinary Hero!

2. Beaufort (pronounced bu-fort) Stew. aka Low Country Boil or Frogmore Stew. Recipe and photo shown.

We like French Toast Bakes for family breakfasts. Soak french bread (sliced or cubed) overnite in the usual milk/eggs/sugar/cinnamon/vanilla mixture in a casserole dish, bake @ 375 degrees in the morning, cut & serve. For large groups and campouts, one of those foil roasting pans that you can throw away (not very green, I know) is handy for this.

Whatever you decide, keep it simple.

Who Doesn't Like Roast Chicken?

One of our favorite things to make when we're camping with the Airstream is roast chicken.

You can freeze the chicken to ensure that it stays fresh until it's your day to cook.

Using the racks in the oven, you should be able to roast two chickens and a pan filled with root vegetables like red bliss potatoes, turnips, carrots and parsnips.

It's simple and easy-you get to spend time with friends and family while dinner cooks, all you have to do is baste the chickens every now and then and turn the vegetables, and it smells amazing!

We think four or five roasted chickens should feed your group nicely. Hopefully the little ones won't fight over the drumsticks.

Abalone camping-sounds like lots of fun! We hope you have a great time!

Don't forget casseroles. Most can be made ahead. Then there is chili, salad and cornbread.

Hi Kevin,
Do I layer the french bread or just lay in a single layer to bake.

My menu is going to include Kevin's french toast bake and sempi2's strata Thanks everyone for all he suggestions.

I wanted to make the frogmore stew but we have some shellfish issues with some of the kids so I am going with the chili and cornbread!

Off to Fort Bragg for some abalone!!!!!

Make ahead then make a big deal about heating it up for a couple hours.

If you are real ambitious serve with cole slaw and mac and cheese. Something for everyone. All can be made ahead. Dress the cole a couple hours ahead.

I have an excellent recipe for pancakes. If you have a griddle, you can cook them in groups of eight and put massive amounts in the ovens to keep warm. I like to serve them with warm syrup.

2 ideas;
1. "kick-up" the pancakes a notch-use a warm cheap beer instead of the milk. gives them a grainy flavor and they are light and fluffy. We usually have more beer than milk with us.
2. BBQ Beef sandwichs--3-4 pound chuck roast trimmed and boned; jar of dill pickels (small whole) with juice; and a jar of Chili sauce. Put in crock pot night before on low for 8 hours or on high for 5 hours. Remove the pix, but we kept and ate them, pull the beef and serve .

Not down here. In Austin, dinner is the evening meal Monday through Saturday, and the midday meal on Sunday. The evening meal on Sunday is supper.

I agree with your breakfast casserole Kevin, and I add a crust by pressing Croissant dough (from a can) in the casserole dish before loading it with cooked hash browns, cooked pan sausage, cooked onions, and then fill it with beaten eggs and bake until done, finishing up with some cheese on top.

Second on the chili idea. Chili, baked potatoes, and bread for dinner one night, then use the left over chili and make chili dogs or chili boats for lunch the next day.

I like to make up a giant pan full of baked ziti, with meatballs before we leave then all I have to do is bake it up and serve with bread. Yum!
