New 2022 Globetrotter 27FBQ
We traded in our 2018 Globetrotter 27 in September and just took delivery of our new 2022. Sounds silly to buy the same thing all over again, but we now have twin air conditioners and other improvements to the line up.
We added 4 solar panels (Zamp Obsidian) and 2 LiFePO4 batteries (Lion Energy).
And the Dexter lift kit for some extra peace of mind. The solar is amazing compared to the 2018 and the lift makes life easier getting in and out of places. No problems on our first "shake down cruise."

Undecideds:
All electric refrigerator.....so far impressed, but not sure how long it will last while boondocking.
Hates:
The on-demand water heater SUCKS.

Curious why you hate the on demand HW heater? I guess if you boondock it's more of an issue than someone like me who always has a plug in. In my GT, the HW in the lavatory sink gets hot almost immediately since it's located on top of the heater. The kitchen sink and shower take a few seconds longer to heat up. I was actually surprised I like the on demand heater since I've always had 5-10 gallon tank heaters and thought they were fine. I really can't remember if the water takes much longer to get hot with this unit than previous RVs.
I know the electric fridge is an often maligned subject with boon dockers. I'm assuming you have 2-100 AH batteries? How long does that run the fridge for? As long as you don't get stuck with cloudy weather, I'd think you'd be fine.
The 2 ACs and 50 amp service were a must have on ours (we live FL). I've had both running to keep the temp down occasionally when we have no shade. Plus, you always have a spare.

The on-demand is not good for boon-docking. You fill the grey tank up with cold water waiting for it to get hot. And every time you turn it off to soap up, you have to start all over again. And you can’t trickle water when you’re doing dishes. It has to be on almost full blast to get the water heater to kick on.
If Airstream is gonna force this on us, they need to reduce the size of the black tank and increase the size of the grey. Or better yet, reverse course and give me back my 6 gallon tank. It was great. Forced you to take quick showers and conserve water when boon docking.
We have had no problems with the new fridge. Seems to be working very well. Much larger than our 2018 also, so that’s a bonus. Much less to have to worry about with the electric than the three way.
We are running two LiFePO4 batteries with four 100W solar panels. Over twice what we had on the 2018 and are happy so far.
Haven’t needed the AC yet, but I think we are gonna love having two. However I figured there would be a front one and a back one. Seems like air comes out of all registers when only one is running. With separate returns, it seems to me the supply should be separated. Any insights?

I believe both AC units are tied into the same ductwork. They can work together when it's really hot or 1 can handle the load for the whole rig. Not necessarily all automatically though...

Has anyone looked into replacing the on demand system with an old style propane/electric? Not sure if there is room for one but it seems like the demand from customers is there.

Another option - recirculate water to keep HW heater running
Jondrew, there may be a simpler solution than replacing the on-demand system with a tank HWH.
Check out Aqua View’s Showermiser - it recirculates the hot water when you turn the valve off so the on demand water heater continues to work for $60.
Here’s how it works from their website:
“While this make good sense to conserve water, it is completely contrary to how a tankless water system works. The moment you shut off the shower water flow to soap up the tankless system shuts down!
Aqua View to the rescue! With the SHOWERMI$ER unit installed not only do you save the fresh clean water from going down the drain on “start up”, but during the “soap up phase” as well. Just by flipping the SHOWERMI$ER leaver back on again, water will stop coming out of the showerhead BUT, will continue to flow so the tankless heater keeps working until you are ready to flip the lever back and rinse off. Continuous hot water and not a drop wasted!”

Someday you may wish to sell in order to fleet up or down. Two a/c’s will give you a wider set of potential buyers.

It's not about where you live.....but where you want to travel ! ! ! ! And the extra flexibility.
We certainly survived with a single 30 amp, but when we were in WA ID MT and WY last summer we were baking in their record breaking heat. I'm guessing (fearing) that will be the new norm. The 50 amp power cord is back breaker, but cool will be there when you need it. And when you trade/sell later down the line as mentioned above.

We're not boondockers, but I do love the concept of this technology. My only concern is that it needs a direct line back to the fresh water tank (non pressurized). I would think that could be a PITA to route/connect.
Heck, I'd like to have this for when we're on FHUs.
