You will be fine with the wider Airstream. I pull my 30 with an f150. Keep in mind, your 45’ was a tall giant box requiring you to focus on a lot more than just width.

In addition, the reefer size was a consideration to go to 25.

We have a 23 foot with the rear bed - we like that there is no wasted hallway space at all. We can boondock for a week at a time on our tanks - using them carefully, and spend most of our time in National Parks with no hookups. We do fine with our tanks and refrigerator.
Ultimately it is a very personal preference but being 2 feet shorter gives us more options in old campgrounds where the spaces tend to be on the smaller side.

If you prefer commercial campgrounds, you could go larger, if you prefer National Parks smaller is preferable.

This is the same reasoning I'd just selected the 23FB. Still even after the purchase I'm thinking about the 25FB mostly due to the double end panoramic windows that it has.. but I don't want to limit myself out of tighter campgrounds with non electrical beautiful sites - provincial and national.

Plus uniquely I'll be towing with a Tesla so unusually low hitch weight sub 500lbs and narrow body for aerodynamic efficiency was part of the selection criteria. Plus they've now increased the fridge freezer size on the 2022+ by dropping the microwave.

It's a very tough choice between the 23FB & 25FB, still on the fence but I think overall a 23' gives more versatility for smaller sites and offgrid areas

The 23 footers have a published tongue weight that’s under 500 lbs., but it will be between 500 and 600 lbs. or possibly even more when loaded for camping. Probably not a big deal, but you should be aware of it.

We tow an International 25 with an F-150 with tow package, which includes the tow mirrors and have absolutely no problem seeing. You could also consider installing side view cameras if you're really concerned about it. Haloview just came out with the side view cameras which replace the side markers.
