I’m from Texas and lived in California for 28 years. Never ask a Californian about barbecue. Ask them about sushi.

Texas barbecue is all about the smoke. If a bbq place doesn’t have stacks of wood and dense smoke, it ain’t BBQ!

Sauce should be a condiment, if at all.

"Man Fire Food". Host
Roger Mooking travels about the country showcasing various chef's cooking with different techniques of fire. BBQs, grills, smokers and pit houses in different styles of barbecue/grilling.

And please don’t call it “Q”. Grew up in Arkansas and have lived in Memphis and Austin. The first time I ever saw barbecue (bbq) referred to as Q was 25 yrs ago in NYC. Just saying....

I have lived in Texas all my life. When I hear the word BBQ I think of the MEAT, and I put BBQ Sauce on my BBQ. I LOVE BBQ by the way

Christopher Columbus travelled four times to the Americas beginning in 1492. "The first tribesmen he encountered were Arawaks, and the Spaniards tried to document their language and their habits. Unlike Europeans, Arawaks cooked outdoors most of the time, although there are some records of indoor fireplaces. One of their favorite methods of cooking and preserving food was to place it on a wooden frame above the fire. It was built of green wood so it would not burn, had four vertical poles to hold up a grid of more green wood cross pieces, and was usually tall enough to prevent the wood and food from incinerating. The word for this device, they said, was barbacoa and the Diccionario de la Lengua Espanola (2nd Edition) of the Real Academia Espanola traces the origin of the word to the Taino dialect of the Arawak American Indians. The Spanish explorer Gonzalo Fernández De Oviedo y Valdés traveled extensively in the Caribbean and what is now Florida in the 1500s, and he was the first to use the word in print when, in Spain in 1526, he first described the devices."


Based on this history, I think Barbecue has to be the name of the contraption where the food is grilled and not the sauce.

First, never ask for an opinion from anyone from the “Left” Coast. BBQ is only a term for a type of cooking or preparing. BBQ what? Meat, grill, sauce, rub, stand, utensils? Be careful with who you ask, Southerners understand and BBQ ends in West Texas.

You "grill" a steak and you "BBQ" ribs or pork shoulder. Sauce is always optional.

I have heard a BBQ (the cooking device) called a grill, but around here it's pretty much universally called a BBQ (pronounced barbecue).

I don't know if it says BBQ on the box, but that's how they're advertised in Canada. Not just Canadian companies, but Home Depot and Walmart too. Homedepot.ca refers to BBQs while homedepot.com uses the term grill.

It's not an English/French thing, because both words are the pretty much the same in both languages.

BBQ is slow cooked meat

Often accompanied by a sauce, known as BBQ sauce.


The thing meat is cooked on is a smoker, a grill, a griddle or a stove.


Used with wood, charcoal, gas, or electric elements or pellets.

But no device for cooking said meat is known as. "BBQ"..... Unless you are from the West coast.
