Control Panel/Tank Monitors

I am planning on updating the level monitor and control panel etc... Has anyone done this by just swapping sensors and using existing wires?

While it's pleasing to look at, the control/monitor panel in my 75 Overlander is a conspicuous consumption of space and dreadfully inaccurate.

In 1992 I had a 5th wheel built, the control/monitor space was about 5x7 and included gas tank monitors and hot water heater control.

Switching from what to what systems/brands? When I had JC do my 2014 FC25 they pulled new wires for the SeeLevel system. There is another thread in the last week or so where someone has pictures and good commentary on installing a SeeLevel that you might want to take a look at.
