Moving Windows for Front Kitchen.......

I have been looking all around the the forums for front kitchen renovations, that is moving the kitchen to the front. I was given a very nice 1992 (its either a 1992 or 1994, I have the paperwork some where) 34 ft excella and it had been used pretty hard and just needed some updating. The big issue is the window is too low for counters to be put in and the counters would only be as tall as the top of my couch.
I talked to an airstream trailer place about moving the window and it cost upwards of 5,000 dollars. My uncle is an excellent aluminum welder and said he would help me move it, but I would have to do most of the leg work and figure out where to cut/ weld /move.
My other option is to build a 2-3" groove in the back or the counter top to accommodate the window so it could still open and close.
So here is my question-- can anyone point me in the direction of people have either moved windows or done a front kitchen renovation?
