We tried using Verizon Unlimited as our home's sole WiFi source using hot spots from our phones. Worked fine each month for about a week until we burned thru our 4g data and Verizon throttled the data. At that point the internet became basically useless. We live in a rural area near the interstate and Verizon has a tower about a half mile away. It was worth a try. We then tried a mobile hot spot from Impact wireless. This is a mobile WiFi unit about a little bigger than a cell phone. Runs off the wall or battery. For a hundred bucks a month we tap into 4G anywhere we can get a Verizon signal and so far it has been truly unlimited. Works great. We have had it for a couple of months.

I just looked at the Impact website. Kinda awful... can you provide more info on how Impact works? How is it associated with a Verison account?

That is pretty much what we do except with a cellular phone rather than iPad.
Anywhere we can get cell service we can watch tv using the phone, adapter plugged into the tv. We have U-verse at home and use their app on the road. Works pretty darn good using the unlimited plan through Verizon. It's the best option we have found so far short of some satellite service. We do like watching movies at night on the road.

So, I am learning. The Verizon Unlimited plan is not unlimited at all. It is limited for a max of 20GB high speed Internet using it as a Hotspot.
What is the workaround, or company, product or device configuration that provides a mobile person truly unlimited high speed Internet without throttling?

Verizon brings back unlimited

If TV is your main concern switch to AT&T - they allow you to stream DIRECTV with no cap on data. Streaming DIRECTV content via the app does not count towards the phone line’s data ceiling when, once hit, your data may be throttled if network is congested. It doesn’t count against your hotspot data usage either - and that’s important because once you hit that ceiling, speed WILL be throttled.

I don't have a good solution for full time. But for the few days of the month I am working from my airstream I use a Skyroam device. It is not the cheapest, but it means I get to use a lot of data for work etc... without racking up a huge data bill. I use about 4.5Gb a day for work..

You may want to consider looking at MVNO carriers, these are “virtual” networks that actually use the big carrier networks. TracPhone is an example, as is Virgin Mobile...but there are many out there. Some offer hotspot/data only plans, some don’t.
