Upgrading Solar Capabilities in Stages

Good morning all!
I know there are tons of solar upgrade threads, but it always seems to be an all or nothing approach.
So here we go.
In the planning stages of upgrading our solar capabilities for our 2021GT25FBT.
I want to do this in a couple of stages with the first to be taking care of the internal components and the second to upgrade the pair of factory installed 90W panels on the roof.
I plan on upgrading the WFCO Power Converter so it will handle the two Battleborn 100A batteries (which I will be moving to the right front sotrage area on the AS) that I am planning on. Already purchased the wireless dongle for the factory installed 150/35 Solar Controller and have made a decision to upgrade the Progressive Dynamics 1000 watt inverter to a PD1800 watt inverter so I can let the wife run her instant pot and/or microwave while potentially boondocking.
The second stage of replacing the 2 existing panels on the roof with 200 Watt panels will come down the line as we get more serious about being off the grid a little longer.
So my question to you is - faults in my thought process?
Anything I might be missing (yes I know I could always go bigger, stay out longer, impress my friends at the RV park) that I should add to the mix?

Sounds like a reasonable approach. I'd make sure to add disconnects for both the batteries and the solar panels as well as a shunt to monitor charge status/usage.
