The flush-mount lights in the ceiling (and in the ceiling in the cabinets) have two springs that hold them in... the entire fixture will pop down slightly and then the spring coils start to catch because they are really tight with the holes in mine. Some of mine came out by pulling down equally on both sides, others worked better by pulling one side out first. Keep your fingers close to the springs, as when they pop out of the roof, they are like a mouse-trap.
I am going back to try the under-cabinet lights again... they are a mystery...
