That sink looks great. We have the same space issue in our 55 Flying Cloud. After looking through pictures of the vintage Pullman fold up sinks, we decided to make a flip up. We did and it works well. Flip it up and you have a bit more room to get into the shower. There are pictures of it on Post #399 of our build thread listed.
P.S. some have simply had the sink drain into a jug which can be dumped into the toilet.
That looks like an excellent solution.
The problem I see with the flip up is that it looks like reduces your headroom when you are "sitting down". But apparently that works too for some folks.
I fabricated this fold up sink from a sheet of high density polyethlene used for cutting boards and a 8" diameter stainless steel sink bowl from a marine supply house. The counter is held horizontal with a cable stay. There is a perforated strainer for the opening in the sink. The sink is positioned when in use directly above the open toilet hole so it drains into the toilet without any piping needed.
It folds against the wall when not in use. The top and bottom strips and attached using double faced tape.
