If you no longer have a need for a water tank, that is not a good idea.
Since the treailer can't move, unless you tow it, then it is not impossible to blow a radiator hose on the tow vehicle.
That being the case, all you need to continue on, is some duct tape to wrap the hose, refill the radiator from water that's in the trailer, and put the radiator cap back on, but not tight.
That would let you continue down the road.
If you wish, that water is more than just a convenience item.
