Tank sensor needed?

I'm restoring a '76. I am getting rid of black water tank by installing composting toilet. This leaves me with 40 year old fresh and grey water tanks, along with a nice big empty spot where the black water was.
Do I need to buy tanks from rv supplier that puts the sensors in or can i get some made without? Do you really need those sensors? Has anyone bypassed new sensors? Any great ideas?

You can check out SeeLevel by Garnet Instruments. Pretty simple to install and the monitor display is great. We have this system in our 66 and will install in the 55. Good Luck
