Removal, and replace or reuse the “control center” in a 76 Sovereign

I’m doing demo on my 76 Sovereign, and I’m getting to the point where I need to figure out a few things. I need to disconnect the control center and have a few questions:

1. Is there something more modern I could use to monitor tank levels and power?

2. The stove vent is directly under the control center and I am assuming they are combined. Am I wrong? Is the vent totally independent and they just happen to be installed that way?

1. I’m also looking for a modern (smaller) tank level system that will work with the old (1974) tanks and sensors. Possible?

2. They are combined as a single unit or at least that’s how I removed mine. It would be possible to separate them.
