Here is a photo of the drain pipe stack on the 69 Globetrotter. It was black tank first, then the dump valve, and then the tee for the gray water drain line. I post it only so you can see some of the parts needed.

Sounds like the installation of a gray water tank is very important to your camping style. I think that your concept is workable.

Your door opening is very small. I would plan on removing the front of the vanity and building a custom tank to maximize your gray water tank storage capacity.

Another option would be to pump the gray water to a tank that is above the sink level. Why limit yourself to gravity feed? If you force fed (filled) the tank you could locate it anywhere even in the rear of your tow vehicle.
