Replacing and relocating fresh water tank.

Okay so I've got a '63 Overlander that has the original metal cylinder fresh water located at the front under the bed/couch. The inside hasn't been touched or care for maybe ever so I'm planning on redoing the whole plumbing system with pex. To get to my question... I'd like to get a plastic fresh water tank and place it under the sink in the rear bath. The hot water tank (I'll be replacing that too) and everything else that needs water is back there except the kitchen sink which can be easily plumbed by running the pipe under the back bed. So finally my question is will this throw off my weight distribution or does anyone see a problem that I don't?
