Our owner's manual has the fresh water diagrams in it, but the Parts Book has far more info and diagrams. You can download the Parts Book for your trailer from Airstream's website.

I have a leak coming from under the bathroom vanity. I downloaded the parts book as recommended by the first responder to my inquiry and it is very informative. However for the life of me I don't see how I can access anything under the vanity. My hunch is the line to the toilet is the source of the leak. Any suggestions or experiences you may have had are much appreciated.

If you have a 27, that's the wrong diagram. I don't have a 27, but in our 25 the panels at the back of the vanity have screws in them suggesting that the panel can be removed for access.
I had a similar need (to find some plumbing details) and eventually discovered that the best source of info I found is the PARTS BOOK that Airstream publishes, it is at the Airstream website. Posting this update in case it helps others who discover this thread while searching the forum.
FWIW appears they weren't putting the water lines plumbing diagrams in the Owner's Manual at the time, but there is a diagram in the Parts Book for your model:
